Maple Glazed Apple Blondies

0 Preheat your oven to 350°F degrees.
11 Line an 8x8-inch baking pan with parchment paper & oil.
1 Heat a small pan, add in the chopped apples, sugar, cinnamon & vanilla. Cook for about 5-7 minutes until cooked down & then set aside to cool.
2 Next, melt the butter, set aside, and let cool.
3 In a large bowl, add in the butter and sugar. Stir until well combined. Add in the vanilla extract and egg. Stir again.
5 Gradually fold the dry ingredients into the wet mixture with a rubber spatula, creating a thick batter. Then gently fold in the cooled apples.
7 Pour the batter into the prepared pan, spreading it out evenly.
8 Bake for 25-30 min, or until a toothpick comes out clean.
9 While the blondies cool, prepare the glaze. In a small bowl, add all the glaze ingredients. Use a hand mixer and mix until there are no longer clumps. Start with 1 tbsp heavy cream and add an additional if you need it.
10 Drizzle the glaze over the cooled blondies. Slice & enjoy!
