Chocolate Covered Cookie Dough Truffles

1 In a medium bowl, stir together cashew butter, almond flour, chocolate chips, maple syrup, vanilla extract, and sea salt until everything is incorporated. 
2 Place the mixture into the fridge for about 30 minutes to harden. Roll the dough into 16-18 balls. 
3 Melt chocolate with coconut oil, either on the stovetop or in the microwave. 
4 Dip each ball in the chocolate, place on a sheet pan lined with parchment paper. Sprinkle with flakey sea salt.
5 Store in the fridge for 1 hour to harden. Keep stored in a container in the fridge for up to 2 weeks! Or freeze & thaw for a few minutes before enjoying!
