Chocolate Cherry Baked Oatmeal

1 Preheat oven to 350 degrees.
2 In a large mixing bowl, whisk the eggs together. Add in maple syrup, yogurt, cashew milk, & vanilla extract.
3 Once combined, pour in the oats, baking powder & sea salt. Mix until well combined. 
4 Add in the fresh pitted & chopped cherries! Or you can use frozen here. You can reserve some for topping, add additional for topping, or just mix everything in! 
5 Next, add in the chopped dark chocolate or whatever chocolate you're using!
6 Pour into 12 greased regular muffin tins OR a greased 9x9 baking pan.
7 Bake for about 30-35 minutes until center is set but still soft. For muffins, bake for about 20-25 minutes.
8 I love serving mine with yogurt, more cherries, and peanut butter! Enjoy!
